María Ayala San Nicolás obtained her degree in Biochemistry from the Faculty of Chemistry at the University of Murcia (Spain). During that period, she was an internal student at the Department of Biochemistry, Molecular Biology, and Immunology, specifically in the Immunity and Cancer Researcher Group, for three years. She got an MSc in Clinical Analysis in 2022 and an MSc in Nutrition, Technology, and Food Safety in 2023. In 2022, she joined the Research Group on Microbiology and Quality of Fruits and Vegetables at the Food Science & Technology Department at CEBAS-CSIC Institute in Murcia, where she is pursuing her doctoral studies. Her supervisors are Ana Allende, as her director, and Mabel Gil, as her co-director.
RESEARCH INTEREST
Her Ph.D research focuses on identifying the sources of Listeria spp. and Listeria monocytogenes contamination and transmission patterns in both production systems and processing plants, as well as characterizing the pathogens through Whole Genome Sequencing. The ultimate goal is to develop a quantitative risk assessment to prevent contamination of fresh vegetables by Listeria spp., and to select effective control measures.
